Aurora began in 2014, in a kitchen barely large enough for two ovens. We started with a single sourdough, a borrowed starter named Margot, and a stubborn belief that bread deserves time.
Today we work with stone-milled flours from regional grain growers, butter from a single dairy in Normandy, and a wild levain that has been alive for over a decade. Nothing is rushed. Everything is shaped by hand.
The closest thing to a Paris morning I've found in this city. Their croissant has ruined every other croissant for me.
There is real soul in this bakery — a kind of hush when you walk in, like a small chapel of butter and flour.
I drive forty minutes every Saturday for their sourdough. I would drive farther.
